You use regular cake batter and add food coloring to make the top of the cupcakes look like the Earth, but in a cupcake liner. You can use gel food coloring or a few drops of green food coloring or blue drops of food coloring. What better way to celebrate Earth than with fun Earth day cupcakes. And if you’re really feeling it, you can add vanilla frosting if you don’t like plain cupcakes.

- White or vanilla cake mix
- 3 eggs
- 1/2 cup oil
- 1 cup water
- Green and blue food coloring

Step 1
Mix the cake mix by following the directions on your cake mix box.
Step 2
Divide the cake mix into 2 separate bowls.
Step 3
Add blue food coloring to one and green food coloring to the other.
Step 4
Drop each color of batter in 1 tablespoon at a time, alternating colors.
Step 5
Keep filling up the muffin cups alternating colors, until they are about 1/2 full.
Step 6
Bake according to the directions on the cake mix box. The mix I used called to bake them at 325 degrees for 12-17 minutes. Mine took about 15 minutes to bake.
Step 7
You’ll know when they are done by inserting a toothpick in the center of the cupcake and it comes out clean. Take them out of the cupcake pan to cool.
Notes:
If you’re using white cake, only use egg whites and you’ll see the blue and green more vibrant. What a great treat.
You can use green frosting and royal blue icing color to make the frosting look like the Earth Day cupcake.
